Job Description

Position: Commis Commissary (Full time #528306)
Property / Office: Mandarin Oriental, Jakarta
Location: Jakarta, Indonesia

Duties and Responsibilities

  • Work under the Ex Sous Chef Supervision related to checking, receiving, reporting goods from our supplier and basic support in the culinary operation during his free time.
  • Ensure that products meet standards of quality and safety after pass checking from receiving team.
  • Ensure all products are according to the standard quality before sending to the food production area and test products if necessarily needed to meet hotel standard of product.
  • Inspect products purchased by hotel from suppliers and maintain communication with receiving team in order to ensure the supplier that is used by the Food Production area meets specified requirements.
  • Responsible on daily basis to deliver and dispatch all goods to kitchen production area only.
  • Ensure all food is checked and received by kitchen outlet representative.
  • Write and present a report of food that has been conducted daily if there is not meet as per food production needs and show the findings to Executive Sous Chef
  • Responsible for checking all good receive as per the food production area quality meets.
  • Having the basic cooking skill and handle kitchen equipment for support designated kitchen outlets.
  • Help and supports daily operational in the kitchen

Requirements:

  • Basic Knowledge about Food Ingredients
  • Familiar with food terminology for specific item of Ingredients.
  • Proficient in written and spoken English.
  • Understand basic HACCP especially for Receiving Loading Dock Procedure
  • Good numerical skills
  • Familiar and able to Understand Computer literacy
