Introduction
We are seeking a dedicated Butcher Professional to join our dynamic team at a leading food‑service operation located in Pluit. This role is essential for ensuring that customers receive premium quality meat products that meet the highest standards of freshness, safety, and presentation. The successful candidate will work closely with the purchasing, inventory, and retail teams to deliver a seamless experience from the cutting board to the shop floor.
Responsibilities
- Perform precise cutting, trimming, and portioning of a wide variety of meats, including beef, pork, chicken, and lamb, following established specifications.
- Maintain optimal storage conditions by rotating stock, labeling cuts, and monitoring temperature logs to comply with food‑safety regulations.
- Prepare specialty cuts and custom orders for retail customers and wholesale clients, offering expert advice on cooking methods and portion sizes.
- Ensure the cleanliness and sanitation of all workstations, tools, and equipment in accordance with HACCP and local health authority guidelines.
- Conduct daily inspections of raw material deliveries, verify documentation, and report any discrepancies or quality concerns.
- Collaborate with the kitchen and catering teams to support menu development, providing input on meat selection and cost‑effective sourcing.
- Track inventory levels, update stock records, and assist in ordering supplies to minimize waste and maintain profitability.
- Train junior staff on proper cutting techniques, safety protocols, and customer service best practices.
- Uphold a professional appearance and demeanor, representing the brand positively to all visitors and clients.
Requirements
- Male or female applicants, age not exceeding 35 years.
- Minimum education: SMA/SMK or equivalent.
- At least 1 year of hands‑on experience as a butcher in a retail, wholesale, or hospitality setting.
- Demonstrated mastery of cutting, deboning, and meat preservation techniques.
- Strong knowledge of food safety standards, including proper handling, temperature control, and sanitation procedures.
- Excellent attention to detail, disciplined work ethic, and a high degree of responsibility.
- Ability to work effectively within a team, communicating clearly with supervisors, colleagues, and customers.
- Physical stamina to stand for long periods and handle heavy cuts safely.
- Flexibility to work Monday through Saturday, 08:00 – 17:00.
