Introduction

Responsibilities
- Assist the chef in preparing, chopping, and portioning ingredients for a diverse menu that includes Indonesian specialties, international dishes, and seasonal specialties.
- Organize, receive, and store food deliveries, ensuring proper rotation (FIFO) and accurate inventory counts to minimize waste.
- Maintain and sanitize all kitchen equipment, including grills, ovens, mixers, and cutting tools, adhering to strict food safety regulations.
- Monitor stock levels of herbs, spices, and pantry items, and promptly report low inventory to the kitchen manager.
- Support the plating and garnishing process during service, ensuring each dish meets the restaurant’s visual and taste standards.
- Participate in daily briefings, communicating any equipment issues, ingredient shortages, or special dietary requests.
- Follow all health, safety, and sanitation protocols, including proper hand‑washing, use of personal protective equipment, and routine deep‑cleaning schedules.
- Assist in menu development trials by testing new recipes, measuring ingredients precisely, and providing feedback on flavor balance.
- Maintain accurate records of food waste and assist in implementing waste‑reduction initiatives.
- Work collaboratively with front‑of‑house staff to ensure timely delivery of orders and address guest concerns when necessary.
Requirements
- Male candidates aged 19‑23 years; maximum age 23.
- Minimum education: SMA/SMK or equivalent.
- At least 1 year of hands‑on experience in a restaurant or hotel kitchen, preferably in a supporting or line‑cook role.
- Strong knowledge of kitchen equipment, their functions, and routine maintenance.
- Excellent attention to detail, strong communication skills, and effective time‑management abilities.
- Personal attributes: honesty, politeness, diligence, and a commitment to personal cleanliness.
- Willingness to be stationed at Grand Indonesia Mall or Tangerang Selatan.
- Core skills: cooking techniques, precise measurement, adherence to recipes, hygiene practices, quality control, and seasoning management.
