Introduction

We are seeking a dedicated Senior Cook – Operasional Dapur to join our dynamic culinary team. This pivotal role ensures the smooth operation of our kitchen during peak service hours, upholds the highest standards of food safety, and contributes to the creation of memorable dining experiences for our guests. The successful candidate will bring a blend of technical cooking expertise, strong leadership, and a keen eye for inventory control.

Responsibilities

  • Prepare, cook, and present a variety of international and traditional dishes according to established recipes and quality standards.
  • Supervise junior kitchen staff, delegate tasks, and provide on‑the‑job training to maintain consistent performance.
  • Manage stock levels, conduct daily inventory checks, and coordinate with suppliers to ensure timely replenishment of ingredients.
  • Enforce strict kitchen sanitation and safety protocols (SOPs), performing regular audits and corrective actions when necessary.
  • Monitor kitchen workflow during rush hours (13:00 – 21:00, Tuesday to Sunday) to guarantee timely order fulfillment and minimize bottlenecks.
  • Collaborate with the head chef on menu development, seasonal specials, and cost‑effective plating techniques.
  • Maintain accurate production logs, waste reports, and cost control records to support financial objectives.
  • Assist in the planning and execution of large‑scale events, banquets, and catering orders, ensuring all specifications are met.

Requirements

  • Minimum education: SMA/SMK or equivalent; preferably a diploma in Culinary Arts (Tata Boga) or related field.
  • At least 3 years of hands‑on experience as a cook in a fast‑paced restaurant, hotel, or catering environment.
  • Demonstrated proficiency in both international and traditional cuisine preparation.
  • Strong knowledge of stock management, portion control, and kitchen SOP compliance.
  • Ability to thrive under pressure, especially during high‑volume periods.
  • Excellent communication skills and a collaborative attitude toward team members.
  • All genders are welcome; candidates must be able to work flexible hours, including evenings and weekends.
  • Physical stamina to stand for extended periods and handle hot equipment safely.
