Introduction
We are seeking a dedicated Koki Senior – Persiapan Masakan dan Pengelolaan Dapur to join our dynamic culinary team. This senior kitchen position plays a pivotal role in delivering high‑quality dishes, maintaining strict hygiene standards, and ensuring smooth daily operations in a fast‑paced restaurant environment. Responsibilities
- Plan, prepare, and execute a wide variety of menu items according to established recipes and presentation standards.
- Supervise and mentor junior kitchen staff, including line cooks, prep cooks, and kitchen assistants, fostering a collaborative and disciplined work environment.
- Manage inventory levels, conduct regular stock counts, and coordinate with suppliers to ensure timely delivery of fresh ingredients.
- Implement and monitor food safety and sanitation protocols in compliance with local health regulations and company policies.
- Oversee kitchen equipment maintenance, schedule routine cleaning, and troubleshoot minor technical issues to minimize downtime.
- Control food costs by monitoring portion sizes, minimizing waste, and suggesting cost‑effective menu adjustments.
- Collaborate with the Head Chef and restaurant management to develop seasonal menus, special promotions, and catering packages.
- Maintain accurate production logs, daily reports, and documentation of any incidents or deviations from standard procedures.
- Ensure a clean, organized, and safe working environment, promoting teamwork and open communication among all kitchen personnel.
Requirements
- Minimum education: SMA/SMK or equivalent.
- At least 2 years of professional experience in a commercial kitchen, preferably in a supervisory or senior cooking role.
- Proven ability to work under pressure while maintaining high standards of quality and consistency.
- Strong knowledge of food preparation techniques, flavor profiling, and plating aesthetics.
- Excellent interpersonal skills: disciplined, honest, responsible, and able to work effectively in a team.
- Basic understanding of inventory management, cost control, and kitchen safety regulations.
- Flexibility to work Monday through Saturday, 08:00 – 17:00, with occasional overtime during peak periods or special events.
