Introduction
PT. AeroCulinary, a leading food‑and‑beverage operator at Soekarno‑Hatta International Airport, is seeking a motivated Koki Utama / Cook Helper to join our dynamic kitchen team. This full‑time position is based in the bustling airport terminal, offering a vibrant work environment where you will support senior chefs in delivering high‑quality meals to travelers and staff. The role follows a Monday‑to‑Sunday schedule, with working hours from 08:00 to 17:00. Candidates must be under 35 years of age, possess at least a senior high school (SMA/SMK) education, and have a minimum of one year of professional cooking experience.
Responsibilities
- Assist the head chef in preparing and portioning raw ingredients, ensuring that all items are washed, trimmed, and stored according to safety standards.
- Conduct daily inspections of food supplies and kitchen equipment, verifying freshness, quality, and proper functioning before each service.
- Operate a variety of cooking appliances—including stovetops, ovens, grills, and fryers—to execute menu items with consistency and speed.
- Plate dishes according to the restaurant’s visual guidelines, performing final checks for garnish, temperature, and presentation before service.
- Maintain immaculate cleanliness throughout the kitchen, including regular sanitation of work surfaces, utensils, and storage areas in compliance with HACCP and local health regulations.
- Organize and label all inventory, ensuring that ingredients and tools are stored in designated locations to prevent cross‑contamination.
- Monitor stock levels, prepare purchase requisitions, and collaborate with the procurement team to replenish items before shortages occur.
- Follow the company’s Standard Operating Procedures (SOPs) for food safety, waste reduction, and emergency response.
- Support team members during peak periods, helping to coordinate timing, multitask orders, and keep the workflow smooth.
- Participate in regular training sessions on new recipes, kitchen technology, and customer service best practices.
Requirements
- Minimum education: SMA/SMK or equivalent.
- At least 1 year of hands‑on experience in the food‑and‑beverage (F&B) industry, preferably in a high‑volume kitchen.
- Demonstrated proficiency in cooking a wide range of dishes, including grilling, sautéing, baking, and stir‑frying.
- Strong knowledge of food hygiene, sanitation, and temperature control standards.
- Excellent time‑management skills with the ability to prioritize tasks under pressure.
- Effective communication abilities, both verbal and written, to coordinate with chefs, suppliers, and front‑of‑house staff.
- Team‑oriented mindset while also capable of working independently when required.
- Physical stamina to stand for extended periods, lift up to 25 kg, and handle fast‑paced kitchen activity.
