Introduction
We are seeking a dedicated Professional Cold Section Cook to join our dynamic kitchen team. Responsibilities
- Prepare and assemble a wide variety of cold dishes, including salads, appetizers, sushi rolls, and buffet platters, following standardized recipes and presentation guidelines.
- Maintain strict food safety and hygiene practices, ensuring all ingredients are stored, handled, and displayed in compliance with local health regulations.
- Monitor inventory levels of fresh produce, meats, cheeses, and other cold‑section ingredients; communicate shortages to the kitchen manager and assist in ordering when necessary.
- Coordinate with the hot kitchen and service teams to synchronize timing, ensuring that cold dishes are ready for service alongside hot menu items.
- Train and mentor junior kitchen staff on proper knife skills, portion control, and plating techniques specific to the cold section.
- Conduct daily equipment checks, maintain cleanliness of workstations, and troubleshoot any issues with refrigeration units or slicers.
- Adapt recipes and presentations based on seasonal availability, dietary trends, and guest feedback to keep the menu fresh and exciting.
- Work efficiently under high‑volume periods, such as lunch rushes and banquet services, while maintaining composure and attention to detail.
Requirements
- Minimum education: High School Diploma (SMA/SMK) or equivalent.
- At least 1 year of proven experience working in a cold‑section or similar culinary role.
- Strong communication skills and the ability to convey information clearly to team members.
- Honesty, reliability, and a strong sense of responsibility in handling food and equipment.
- Demonstrated ability to work both independently and as part of a collaborative kitchen team.
- Comfortable performing under pressure, especially during peak service hours.
