Introduction

BISA Café, a vibrant and fast‑growing culinary brand in the Greater Jakarta area, is seeking a dedicated Senior Kitchen Staff – Operational Kitchen Management to join our dynamic team. The successful candidate will play a pivotal role in ensuring that every dish leaving the kitchen meets the high standards of taste, quality, and safety that our guests expect.

Responsibilities

  • Oversee and execute the preparation of raw ingredients (food prep) for a wide range of traditional Indonesian dishes, ensuring consistency in portion size and presentation.
  • Cook orders according to standardized recipes, monitoring cooking times, seasoning levels, and plating techniques to achieve the desired flavor profile.
  • Maintain the freshness and hygienic condition of all food items by implementing proper storage practices, rotating stock, and conducting regular temperature checks.
  • Ensure the kitchen work area, utensils, and equipment are kept clean and organized, following BISA Café’s strict sanitation protocols and local food‑safety regulations.
  • Collaborate effectively with team members, including those with disabilities, fostering an inclusive atmosphere and promoting teamwork during peak service periods.
  • Assist in inventory management by recording usage, reporting shortages, and suggesting cost‑effective sourcing options.
  • Participate in menu development sessions, offering insights on ingredient availability, preparation methods, and potential improvements.
  • Train junior kitchen staff on cooking techniques, safety procedures, and proper equipment handling to build a skilled and reliable workforce.
  • Respond promptly to customer feedback, adjusting recipes or preparation methods as needed to maintain guest satisfaction.

Requirements

  • Minimum education: SMA/SMK or equivalent; a diploma in Culinary Arts (SMK Tata Boga) is strongly preferred.
  • At least one year of professional kitchen experience, preferably in Indonesian cuisine or a fast‑casual dining environment.
  • Proficient in classic Nusantara cooking techniques such as sautéing (tumis), deep‑frying, grilling (bakar), and boiling (rebus).
  • Solid understanding of food‑safety standards, HACCP principles, and proper hygiene practices.
  • Strong physical stamina to stand for long periods, lift heavy pots, and work in a hot, fast‑paced setting.
  • Excellent attention to detail, honesty, and a commitment to delivering consistent quality.
  • Effective communication skills and a collaborative mindset; ability to work respectfully with individuals of diverse abilities.
  • Residency in or near Karawaci, Tangerang is highly desirable to ensure reliable punctuality.
