Introduction
Saimen Bakery & Kitchen, a leading commercial bakery in Jambi, is seeking a dedicated Koordinator Produksi Roti Komersial to oversee daily bread production operations. This role is pivotal in ensuring that every loaf meets the company’s high standards for quality, taste, and consistency while supporting a fast‑paced, target‑driven environment. The ideal candidate will be a hands‑on leader who can balance meticulous attention to detail with the ability to motivate a production team across multiple shifts, including night shifts.
Responsibilities
- Prepare raw materials and ingredients according to standardized recipes, ensuring accurate portioning and freshness.
- Manage the complete dough production cycle: mixing, proofing, shaping, and baking, while monitoring time and temperature parameters.
- Operate and maintain bakery equipment such as mixers, ovens, scales, and slicers, performing routine checks and minor troubleshooting.
- Implement quality‑control procedures to guarantee that each batch meets internal specifications and regulatory standards.
- Maintain a clean and organized work area, enforcing sanitation protocols for equipment, work surfaces, and storage zones.
- Collaborate closely with the production team to meet daily output targets, adjusting schedules and resources as needed.
- Document production data, report any deviations or equipment issues to supervisors, and propose corrective actions.
- Train new staff on proper baking techniques, safety guidelines, and company policies.
- Participate in continuous‑improvement initiatives, suggesting process optimizations to reduce waste and increase efficiency.
Requirements
- Male or female candidates, maximum age 25 years.
- Minimum education: SMA/SMK or equivalent.
- At least 1 year of experience in bakery or food‑production environments; prior experience in commercial bread production is a strong plus.
- Physical fitness, discipline, and the stamina to work long shifts, including night shifts.
- Strong attention to detail, quick decision‑making ability, and a results‑oriented mindset.
- Excellent communication skills for effective teamwork and reporting.
- Proficiency in operating mixers, ovens, weighing scales, and other bakery equipment.
- Ability to follow standard operating procedures, safety guidelines, and hygiene regulations.
- Flexibility to work a rotating shift schedule (Monday–Sunday, 00:00–23:55).
