Introduction

We are seeking a dynamic Senior Food & Beverage Operations Manager to join our prestigious hospitality group. This senior‑level position is responsible for overseeing the delivery of world‑class dining experiences across multiple fine‑dining outlets and 5‑star hotel venues. The ideal candidate will combine strong operational expertise with a refined palate, a passion for luxury service, and proven leadership abilities.

Responsibilities

  • Lead and manage daily operations of fine‑dining restaurants and hotel F&B outlets, ensuring compliance with brand standards and guest expectations.
  • Develop, implement, and continuously improve standard operating procedures (SOPs) for service, kitchen, and bar areas.
  • Design and maintain an award‑winning wine program, curate wine lists, and conduct regular staff training to maximize wine sales and guest satisfaction.
  • Monitor key performance indicators (KPIs) such as revenue per cover, cost of goods sold (COGS), labor efficiency, and guest satisfaction scores; take corrective actions as needed.
  • Recruit, coach, and mentor a multidisciplinary team of chefs, sommeliers, servers, and support staff, fostering a culture of excellence and finesse.
  • Coordinate with the culinary department to create seasonal menus, special tasting events, and promotional campaigns that align with market trends.
  • Oversee multi‑outlet budgeting, forecasting, and financial reporting, ensuring profitability while maintaining the highest quality standards.
  • Maintain strict adherence to health, safety, and sanitation regulations across all outlets.
  • Serve as the primary liaison with hotel management, suppliers, and external partners to secure premium products and negotiate favorable terms.
  • Schedule and supervise staff shifts, ensuring optimal coverage from Monday to Saturday, 08:00‑17:00.

Requirements

  • Minimum education: SMA/SMK or equivalent.
  • At least 3 years of senior‑level experience managing fine‑dining restaurants or 5‑star hotel F&B operations.
  • Extensive sommelier knowledge, including wine list creation, inventory management, and staff training.
  • Demonstrated ability to set and uphold luxury service standards; a keen eye for detail and finesse.
  • Strong leadership and people‑development skills with a track record of building high‑performing teams.
  • Excellent command of English; additional language proficiency is a plus.
  • Proven experience overseeing multiple outlets simultaneously.
