Introduction
We are seeking a dedicated Senior Kitchen Staff – Food Preparation Supervisor to join our dynamic culinary team. This pivotal role ensures that all food items are pre‑pared to the highest standards of quality, safety, and efficiency, supporting our chefs and outlet managers in delivering exceptional dining experiences. The position operates in a fast‑paced restaurant or hotel kitchen environment, with a schedule that spans Monday through Sunday, from 10:00 AM to 6:00 PM.
Responsibilities
- Prepare, wash, peel, chop, and portion a wide variety of fresh ingredients, adhering to standardized recipes and portion controls.
- Maintain strict compliance with food safety regulations, including HACCP, sanitation protocols, and kitchen hygiene standards.
- Implement and monitor the FIFO (First In, First Out) inventory system to minimize waste and ensure product freshness.
- Assist senior chefs and outlet managers by setting up workstations, arranging mise‑en‑place, and replenishing supplies during service peaks.
- Conduct daily cleaning of work areas, equipment, and storage facilities, guaranteeing a spotless and organized kitchen environment.
- Train and mentor junior kitchen helpers, reinforcing best practices for speed, accuracy, and cleanliness.
- Coordinate with the purchasing department to report low stock levels and suggest alternative ingredients when necessary.
- Participate in periodic audits and inspections, documenting corrective actions and continuous‑improvement initiatives.
- Adapt quickly to menu changes, seasonal ingredients, and special dietary requirements, ensuring flexibility and creativity in food preparation.
- Maintain a professional demeanor, demonstrating punctuality, honesty, and a strong work ethic at all times.
Requirements
- Minimum education: High School Diploma (SMA/SMK) or equivalent; culinary training (Tata Boga) is highly preferred.
- At least 1 year of relevant experience as a Cook Helper, Kitchen Helper, or similar role in a restaurant or hotel setting.
- Proficient in basic food‑preparation techniques: washing, cutting, portioning, and storing ingredients.
- Solid understanding of kitchen sanitation, food safety standards, and proper handling of perishable goods.
- Ability to work effectively within a team, following directions from chefs, cooks, and outlet managers.
- Demonstrated speed, precision, and attention to detail in a high‑volume kitchen environment.
- Willingness to learn and apply FIFO inventory management principles.
