We are seeking a dynamic and experienced Koki Kepala Bagian Dapur to lead the culinary operations at Sesi Coffee, a vibrant café located on Jl. Melati, just steps away from the stadium. The successful candidate will oversee the kitchen team, ensure consistency in taste and presentation, and maintain the highest standards of food safety.

Responsibilities

  • Supervise and train kitchen staff, including junior cooks, pastry chefs, and dishwashers.
  • Plan, develop, and update menu items to reflect seasonal ingredients and customer preferences.
  • Manage daily food preparation, ensuring timely service during the café’s operating hours (08:00 – 21:00, Monday‑Saturday).
  • Conduct regular quality audits, tasting sessions, and visual inspections to guarantee product consistency.
  • Monitor inventory levels, place orders with suppliers, and control food waste to optimize cost efficiency.
  • Enforce strict hygiene and sanitation protocols in compliance with local health regulations.
  • Collaborate with the front‑of‑house team to coordinate special events, catering orders, and promotional campaigns.
  • Maintain accurate records of production yields, ingredient usage, and equipment maintenance.
  • Implement and uphold safety standards, including proper handling of kitchen equipment and emergency procedures.
  • Provide feedback and performance evaluations to kitchen personnel, fostering a culture of continuous improvement.

Requirements

  • Education: Minimum SMA/SMK or equivalent.
  • Gender: Female.

  • Experience: At least 1 year of proven experience in a kitchen leadership role, preferably in a café or restaurant setting.
