Introduction

PT Mandala Karya Sentosa is seeking an experienced and motivated professional to join our hospitality team as a Leader – Food & Beverage (F&B). This pivotal role will oversee the daily operations of our food and beverage outlets, ensuring that every guest experience meets the high standards of service, quality, and safety that our brand promises. The successful candidate will act as the operational backbone for a single shift, coordinating staff, managing inventory, and driving sales performance while fostering a collaborative and energetic work environment.

Responsibilities

  • Supervise the day‑to‑day operations of all food and beverage stations, adhering strictly to company SOPs and local health regulations.
  • Plan and allocate tasks for floor staff, cashiers, and kitchen support personnel, guaranteeing optimal coverage throughout the shift.
  • Conduct pre‑shift briefings to align the team on menu updates, promotional offers, and service expectations.
  • Monitor cleanliness and sanitation of work areas, equipment, and dining spaces to maintain the highest hygiene standards.
  • Inspect food quality, presentation, and portion control to ensure consistency and guest satisfaction.
  • Address customer complaints promptly and professionally, following established resolution procedures.
  • Maintain accurate staff schedules, track attendance, and ensure that staffing levels match operational demand.
  • Oversee inventory management, including stock‑taking, waste tracking, and ordering of raw materials.
  • Collaborate with the sales and marketing teams to achieve daily and monthly revenue targets through effective service execution.
  • Utilize the POS (Point of Sale) system for order entry, transaction monitoring, and reporting of sales data.
  • Coach and develop team members, fostering leadership skills and encouraging a culture of continuous improvement.
  • Prepare shift reports that detail performance metrics, guest feedback, and any operational issues for senior management review.

Requirements

  • Minimum education: SMA/SMK or equivalent; preferred background in Hospitality Management or Culinary Arts.
  • At least 1–3 years of hands‑on experience in the Food & Beverage industry, with proven time in a supervisory role such as Captain, Shift Leader, or Senior Crew.
  • Strong understanding of F&B service flow, kitchen operations, and cash handling procedures.
  • Demonstrated ability to lead a team during a full shift, delegate tasks effectively, and motivate staff.
  • Knowledge of food safety standards, hygiene protocols, and compliance with local food regulations.
  • Proficiency in using POS systems and basic inventory management software.
  • Excellent communication and interpersonal skills, with the ability to resolve conflicts and handle guest concerns.
  • Leadership competencies such as strategic thinking, tactical decision‑making, time‑management analysis, and team development.
  • Flexibility to work a 7‑day schedule (Monday‑Sunday) from 08:00 to 17:00.
