Introduction
We are seeking a highly motivated Koki Senior – Spesialis Masakan Barat dan Asia to join our dynamic culinary team in Sleman, Yogyakarta. This senior chef will be responsible for leading a talented kitchen brigade, designing innovative menus that blend Western and Asian flavors, and ensuring that every dish meets the highest standards of taste, presentation, and safety. The ideal candidate is a creative culinary professional with at least two years of hands‑on experience in grilled rice dishes (Nasi Bakar) and banquet (prasmanan) service, a deep understanding of current food trends, and strong leadership capabilities.
Responsibilities
- Lead, mentor, and supervise a team of junior chefs, line cooks, and kitchen assistants, fostering a collaborative and high‑performance work environment.
- Develop and continuously update seasonal menus that showcase a fusion of Western and Asian cuisines, incorporating locally sourced ingredients and emerging culinary trends.
- Maintain consistent food quality and presentation across all service periods, conducting regular tastings and plate inspections.
- Oversee the entire food preparation process—from ingredient procurement and mise en place to cooking, plating, and final service—ensuring efficiency and adherence to SOPs.
- Manage kitchen budgets, control food costs, and monitor inventory levels to minimize waste while guaranteeing sufficient stock for peak service times.
- Ensure strict compliance with health, safety, and sanitation regulations, performing routine audits and corrective actions as needed.
- Design and deliver ongoing training programs for kitchen staff, focusing on technical skills, food safety, and customer‑centric service.
- Collaborate with front‑of‑house managers to synchronize menu offerings with service flow, special events, and guest feedback.
- Handle high‑pressure situations gracefully, meeting tight deadlines during banquet setups, holiday rushes, and special promotions.
- Prepare detailed reports on kitchen performance, cost analysis, and menu profitability for senior management review.
Requirements
- Education: Open to all educational levels; culinary school graduates are a plus.

- Experience: Minimum 2 years as a chef specializing in Nasi Bakar and banquet (prasmanan) operations.
- Location: Must reside in or be willing to relocate to Sleman, Yogyakarta.

- Work schedule: Tuesday – Sunday, 08:00 – 17:00.
