Introduction
We are seeking a dynamic Supervisor Operasional for our flagship kitchen located in Kuningan, South Jakarta. This pivotal role will oversee daily kitchen operations, ensuring that every dish meets our high standards of quality, safety, and presentation. Responsibilities
- Lead, schedule, and supervise a crew of kitchen staff to guarantee smooth daily operations from 07:00 to 16:00, Monday through Sunday.
- Ensure all food items are prepared strictly according to standardized recipes, portion controls, and visual presentation guidelines.
- Maintain rigorous hygiene and sanitation standards in compliance with local health regulations and HACCP principles.
- Conduct regular inventory checks, monitor stock levels of raw materials, and coordinate with the purchasing team to place timely orders.
- Train new kitchen personnel on food safety, equipment usage, and company SOPs; provide ongoing coaching and performance evaluations.
- Develop and enforce cleaning schedules, equipment maintenance plans, and waste‑reduction initiatives.
- Prepare and submit detailed daily and weekly operational reports to the Operations Manager, highlighting production output, issues, and improvement opportunities.
- Collaborate with menu development chefs to test new recipes and ensure feasibility for large‑scale production.
- Act as the primary point of contact for any kitchen‑related emergencies, troubleshooting equipment failures or supply shortages promptly.
- Foster a positive, teamwork‑focused culture that encourages open communication, safety awareness, and employee engagement.
Requirements
- Minimum education: High School Diploma (SMA/SMK) or equivalent; culinary or hospitality training is a plus.
- At least 2 years of experience in a supervisory kitchen role or a comparable position within the foodservice industry.
- Demonstrated knowledge of kitchen operations, food safety protocols, and HACCP guidelines.
- Strong leadership qualities with the ability to motivate, mentor, and evaluate a diverse team.
- Excellent communication skills in Bahasa Indonesia and basic English for internal coordination.
- Proficiency in inventory management, cost control, and basic budgeting.
- Flexibility to work every day of the week, including weekends and public holidays, as operational demands dictate.
- Physical stamina to stand for long periods and handle the fast‑paced environment of a commercial kitchen.
