Introduction
We are seeking a dynamic and motivated Manajer Operasional Dapur Produksi to join our fast‑growing food production team. This role is perfect for a final‑semester university student or a recent graduate who is passionate about culinary arts, particularly pastry and baking, and who wants to gain hands‑on leadership experience in a commercial kitchen environment. The successful candidate will work closely with the head chef, production planners, and quality assurance staff to ensure smooth daily operations, consistent product quality, and on‑time delivery to our retail partners.
Responsibilities
- Supervise and coordinate all kitchen activities during the shift, ensuring adherence to food safety and hygiene standards.
- Plan, schedule, and monitor daily production runs for baked goods, pastries, and other ready‑to‑eat items.
- Manage inventory of raw materials, conduct regular stock checks, and coordinate with suppliers to prevent shortages.
- Train and mentor junior kitchen staff on proper cooking techniques, portion control, and equipment handling.
- Implement and maintain standard operating procedures (SOPs) for recipe execution, cleaning, and equipment maintenance.
- Monitor production timelines and adjust workflow to meet order deadlines while minimizing waste.
- Conduct routine quality inspections, taste tests, and visual checks to ensure product consistency.
- Collaborate with the purchasing department to forecast material needs based on sales forecasts and promotional plans.
- Handle minor equipment troubleshooting and coordinate with maintenance for larger repairs.
- Prepare shift reports, including production volumes, waste records, and any incidents that occurred.
Requirements
- Education: Minimum high school diploma (SMA/SMK) or equivalent; currently enrolled in the final semester of a culinary or hospitality program is preferred.
- Age: Open to all ages; the role is suitable for candidates up to 30 years old.
