Introduction

We are a dynamic, fast‑growing restaurant brand preparing to launch a brand‑new outlet that will showcase the finest Japanese and fusion cuisine. To ensure an unforgettable dining experience, we are seeking two dedicated culinary professionals: a Sushi Chef and a Grill Chef. Responsibilities

  • Prepare and present authentic sushi rolls, sashimi, nigiri, and specialty fusion dishes while maintaining the highest standards of freshness and visual appeal.
  • Execute grill operations, including mastering temperature control, searing, smoking, and finishing techniques for a variety of proteins, vegetables, and signature house‑made sauces.
  • Develop and refine menu items in collaboration with the Executive Chef, ensuring a balanced offering that reflects both traditional Japanese flavors and innovative fusion concepts.
  • Maintain rigorous food safety and hygiene protocols, including proper storage, handling, and labeling of raw fish and other perishable ingredients.
  • Train junior kitchen staff on knife skills, sushi assembly, grill operation, and plating standards to build a cohesive and efficient team.
  • Monitor inventory levels, place orders for high‑quality fish, meat, and pantry items, and minimize waste through careful portion control.
  • Collaborate with front‑of‑house managers to coordinate service flow, handle special dietary requests, and ensure timely delivery of dishes during peak hours.
  • Continuously stay updated on industry trends, emerging techniques, and new ingredients to keep the menu fresh and competitive.

Requirements

  • Male candidates, maximum age 35 years.
  • Minimum education: SMA/SMK; a diploma in Hospitality, Culinary Arts, or related field is strongly preferred.
  • At least 1‑2 years of professional experience as a Sushi Chef or Grill Chef, preferably in Japanese or Japanese‑fusion establishments.
  • Demonstrated expertise in sashimi‑grade fish cutting, rice seasoning, and sushi rolling techniques (for Sushi Chef).
  • Proficiency in grill operation, including mastery of heat zones, meat doneness, and equipment maintenance (for Grill Chef).
  • Strong work ethic: honest, disciplined, and able to thrive under the pressure of a fast‑paced kitchen environment.
  • Leadership qualities with the ability to motivate, mentor, and collaborate effectively with kitchen staff.
  • Excellent communication skills and a customer‑focused mindset.
  • Flexibility to work seven days a week, with shifts from 08:00 to 17:00.
