Introduction
We are seeking a dynamic and seasoned Chief Cook – Head of Kitchen Operations to lead our culinary team across multiple sites. The successful candidate will be responsible for overseeing all kitchen activities, from menu development to staff training, while adhering to strict food safety protocols and delivering exceptional dining experiences for employees in the mining sector.
Responsibilities
- Design, develop, and continuously improve menus that showcase a wide variety of Indonesian cuisine while accommodating dietary restrictions and nutritional guidelines.
- Supervise daily kitchen operations, ensuring timely preparation, cooking, and service of meals for large-scale catering contracts.
- Manage inventory, conduct regular stock audits, and coordinate with suppliers to maintain optimal levels of fresh produce, meat, and pantry items.
- Implement and enforce Standard Operating Procedures (SOPs) related to food preparation, hygiene, and equipment maintenance.
- Lead, mentor, and evaluate kitchen staff, fostering a collaborative environment that encourages skill development and high performance.
- Monitor and uphold food safety standards, including HACCP and local food security regulations, to guarantee the health of all patrons.
- Prepare budget estimates for kitchen operations, track expenditures, and identify cost‑saving opportunities without compromising quality.
- Conduct regular quality audits of dishes, ensuring consistency in taste, presentation, and portion control.
- Coordinate with the operations and logistics teams to schedule meal services across remote mining sites, ensuring seamless delivery under challenging conditions.
- Respond swiftly to emergency situations, such as equipment failures or supply shortages, by implementing contingency plans.
Requirements
- Minimum education: D3/D4 in Culinary Arts (Tata Boga) or related field.
- At least 1 year of experience in a senior kitchen role, preferably within a mining catering environment.
- Proven mastery of Indonesian culinary techniques and the ability to innovate traditional recipes.
- Strong communication skills and confidence in interacting with diverse stakeholders, including management, suppliers, and on‑site personnel.
- Demonstrated leadership ability, capable of managing both large teams and individual contributors.
- Excellent time‑management skills, punctuality, and strict adherence to SOPs under high‑pressure situations.
- Comprehensive understanding of occupational safety in kitchen settings and food safety standards (Food Safety, HACCP).
- Willingness to be deployed to any company location, including remote mining sites.
- Additional skills: budget estimation, food quality analysis, audit procedures, food safety control, traditional cooking techniques, and effective time‑management.
