Responsibilities

  • Prepare and bake a wide variety of breads, rolls, and artisanal loaves, ensuring optimal texture, crumb, and flavor.
  • Create custom cakes, wedding cakes, and specialty desserts from concept to finished product, following client specifications and design briefs.
  • Produce pastries, croissants, danishes, and assorted cookies, maintaining consistency in taste and appearance.
  • Develop and test new recipes, incorporating seasonal ingredients and current market trends to keep the product line fresh and innovative.
  • Measure, mix, and portion doughs and batters with precision, adhering to food safety standards and portion control guidelines.
  • Monitor inventory levels of flour, sugars, fats, fillings, and decorative supplies; place orders and manage stock rotation to minimize waste.
  • Maintain a clean, organized, and sanitized work environment, complying with HACCP and local health regulations.
  • Collaborate with front‑of‑house staff to coordinate order timelines, special requests, and delivery schedules.
  • Train junior bakers and kitchen assistants on proper techniques, equipment usage, and best practices for quality assurance.
  • Document daily production logs, batch records, and any deviations from standard recipes for traceability.

Requirements

  • Minimum education: SMA/SMK or equivalent; a diploma or degree in Culinary Arts, Bakery & Pastry (Tata Boga) is preferred.
  • At least 1 year of professional experience in a commercial bakery or pastry shop.
  • Strong knowledge of basic baking principles, ingredient functions, and dough fermentation processes.
  • Exceptional attention to detail, especially in decoration, plating, and finishing touches.
  • Creativity and artistic ability to design visually appealing cakes and pastries that meet client expectations.
  • Proficiency in using commercial ovens, mixers, proofing cabinets, and pastry tools.
  • Ability to work flexible hours, including weekends, as the bakery operates Monday‑Sunday, 08:00‑17:00.
  • Excellent communication skills and a collaborative mindset for working with a diverse team.
  • Physical stamina to stand for extended periods and handle repetitive motions safely.
