Introduction

We are seeking a dedicated Jurutama Masak – Pengawas Dapur Utama to lead our culinary operations and ensure the delivery of authentic, high‑quality traditional dishes. The successful candidate will oversee daily kitchen activities, mentor cooking staff, and collaborate closely with management to maintain the highest standards of food safety, taste, and presentation. Responsibilities

  • Supervise all kitchen staff, including chefs, line cooks, and assistants, ensuring adherence to recipes, portion control, and hygiene protocols.
  • Develop, test, and standardize traditional menu items, incorporating seasonal ingredients and local flavors.
  • Plan and schedule daily production, coordinating with procurement to guarantee sufficient inventory while minimizing waste.
  • Conduct regular training sessions to improve cooking techniques, safety practices, and teamwork among kitchen personnel.
  • Monitor and enforce food safety regulations, conducting routine inspections and maintaining proper documentation.
  • Collaborate with the front‑of‑house manager to synchronize service flow, ensuring timely delivery of dishes during peak hours.
  • Handle customer feedback related to food quality, making adjustments to recipes or processes as needed.
  • Maintain kitchen equipment, schedule preventative maintenance, and report any repairs promptly.
  • Prepare weekly and monthly reports on kitchen performance, cost control, and staff attendance for senior management.
  • Foster a positive work culture by promoting open communication, recognizing outstanding performance, and resolving conflicts efficiently.

Requirements

  • Minimum education: SMA/SMK or equivalent.
  • Female candidates only.
  • Age between 25 and 45 years, with a maximum of 35 years preferred for leadership roles.
  • Strong communication skills, both verbal and written, in Bahasa Indonesia.
  • Proven experience in a supervisory or head‑cook position, especially within traditional Indonesian cuisine.
  • Demonstrated expertise in creating and perfecting traditional menus, with a portfolio of signature dishes.
  • Excellent teamwork abilities and a track record of mentoring junior staff.
  • Ability to work under pressure, manage multiple orders, and maintain consistent quality.
  • Knowledge of food safety standards (HACCP) and willingness to enforce them daily.
  • Flexibility to work Monday through Saturday, 08:00 – 17:00, with occasional overtime during special events.
