We are seeking a skilled and motivated Koki Pastry to join our bustling kitchen in the Pasuruan region, specifically serving customers in and around Prigen. The successful candidate will be responsible for preparing a wide variety of pastries, from classic croissants and danishes to innovative, locally inspired treats that delight our guests.
Responsibilities
- Prepare, bake, and decorate an extensive range of pastries, breads, and desserts according to standardized recipes and quality standards.
- Develop new pastry concepts and seasonal menu items that reflect current trends and local flavors.
- Maintain strict hygiene and food safety protocols, ensuring all work surfaces and equipment are sanitized.
- Manage inventory of raw materials, conduct daily stock checks, and place orders to minimize waste while keeping costs under control.
- Collaborate closely with the head chef and front‑of‑house staff to ensure timely service and consistent product presentation.
- Train junior kitchen staff on pastry techniques, proper portioning, and plating aesthetics.
- Monitor oven temperatures, proofing times, and baking cycles to achieve optimal texture and flavor.
- Document production yields, adjust recipes for batch scaling, and report any equipment issues to management.
- Participate in regular quality‑control tastings and adapt recipes based on feedback.
Requirements
- Minimum education: SMA/SMK or equivalent, preferably with a focus on culinary arts (tata boga).
- Age: 35 years or younger.
- Gender: Open to all genders.
- At least 1 year of professional experience working in a pastry or bakery environment.
- Proven ability to produce a variety of pastries, including croissants, puff pastries, tarts, and specialty cakes.
- Strong knowledge of dough fermentation, lamination, and pastry glazing techniques.
- Residence within the Prigen area or willingness to relocate.
- Excellent time‑management skills and the ability to work efficiently under pressure, especially during peak service hours (Tuesday–Sunday, 08:00‑17:00).
- Good communication skills, a collaborative mindset, and a commitment to continuous learning.
- Familiarity with basic kitchen equipment such as mixers, ovens, proofing cabinets, and pastry cutters.
- Attention to detail, creativity, and a passion for delivering high‑quality baked goods.
