Responsibilities
- Oversee daily kitchen operations, including food preparation, cooking, plating, and service timing.
- Manage inventory levels of raw materials, monitor stock rotation, and coordinate with suppliers to ensure timely deliveries.
- Implement and enforce strict hygiene, sanitation, and safety protocols in accordance with local regulations and international best practices.
- Collaborate with chefs and sous‑chefs to develop menu items, adjust recipes for cost efficiency, and maintain consistency across all dining outlets.
- Schedule, train, and mentor kitchen staff, fostering a culture of teamwork, continuous improvement, and professional growth.
- Handle guest feedback related to food quality, resolve issues promptly, and ensure a guest‑oriented approach in every interaction.
- Prepare daily and weekly reports on production output, waste management, and cost control for senior management review.
- Assist in budgeting, forecasting, and cost‑analysis activities to meet financial targets without compromising quality.
- Coordinate with the front‑office and banquet teams for special events, large functions, and customized menu requests.
- Maintain equipment logs, schedule routine maintenance, and ensure all kitchen appliances are operating safely.
Requirements
- Minimum education: D3/D4 in Hospitality Management, Culinary Arts, or a related field.
- Prior experience in a similar operational kitchen role within a hotel, resort, or upscale restaurant environment.
- Strong communication skills in Bahasa Indonesia and English; ability to convey instructions clearly to a diverse team.
- Highly motivated, creative, and innovative mindset with a proven track record of delivering results.
- Guest‑oriented attitude, always prioritizing the needs and expectations of patrons.
- Excellent interpersonal skills; a team player who can build positive relationships across departments.

- Additional skill: Proficiency in bread making (Pembuat Roti) is considered a valuable asset.
