Kyuka Ramen, a fast‑growing Japanese‑style ramen chain, is seeking a dedicated Koki Senior Restoran with proven managerial experience to join our dynamic kitchen team. The successful candidate will be stationed at one of our flagship outlets—Grand Kota Bintang (Bekasi), Kerta Jaya (Surabaya), Depok Pancoran Mas (West Java), Blok M (South Jakarta), or Gading Serpong (Verona). Flexibility to work various shifts and across different locations is essential.
Responsibilities
- Prepare, portion, and organize all raw ingredients, ensuring freshness and compliance with food safety standards.
- Execute cooking techniques for a diverse ramen menu, including broth preparation, noodle cooking, and topping assembly, while maintaining consistency with established recipes.
- Plate dishes with aesthetic appeal, adhering to Kyuka Ramen’s visual standards to enhance customer satisfaction.
- Maintain a clean, sanitized kitchen environment; regularly sterilize work surfaces, utensils, and equipment.
- Monitor inventory levels, conduct regular stock checks, and coordinate with suppliers to guarantee uninterrupted kitchen operations.
- Collaborate closely with floor staff and servers to ensure timely delivery of orders, optimizing workflow during peak periods.
- Train junior kitchen staff on proper cooking methods, portion control, and safety protocols, fostering a culture of continuous improvement.
- Assist in menu development by offering input on new dishes, cost analysis, and seasonal ingredient sourcing.
- Track daily sales and kitchen performance metrics, providing reports that support managerial decision‑making.
Requirements
- Minimum education: SMA/SMK, preferably with a focus on Culinary Arts (Tata Boga).
- At least 1 year of hands‑on kitchen experience, preferably in a Japanese or Asian‑cuisine setting.
- Physical fitness to handle prolonged standing, lifting of heavy pots, and fast‑paced movement.
- Strong arithmetic skills for accurate portioning, inventory tracking, and cost control.
- Male candidates should be at least 160 cm tall; female candidates at least 155 cm tall.
- Must not be enrolled in any academic program during employment.
- Excellent communication and teamwork abilities, with a proactive attitude toward problem‑solving.
- Flexibility to work any of the following shifts: Morning (08:00‑17:00), Middle 1 (10:00‑19:00), Middle 2 (11:30‑20:30), or Evening (14:00‑23:00).
- Willingness to relocate across the listed cities and adapt to different outlet cultures.

- Competitive base salary of Rp 1,500,000 per month.
- Meal allowance of Rp 300,000 and transportation allowance of Rp 300,000.
- Performance‑based sales bonus ranging from Rp 500,000 to Rp 1,500,000.

- Structured contract system: 3‑month probationary period (no early resignation) followed by a regular contract without penalty.
