To support our expanding network of eateries, we are seeking a dedicated Professional Chef (Juru Masak) specialized in Sundanese & Cirebon dishes. Responsibilities
- Prepare, cook, and plate a wide variety of Sundanese and Cirebon menu items, ensuring consistency with our signature taste and presentation standards.
- Develop daily special menus and contribute ideas for seasonal dishes that highlight regional ingredients.
- Manage kitchen workflow efficiently, coordinating with sous‑chefs, line cooks, and kitchen assistants to meet service timelines.
- Maintain strict hygiene and food safety protocols, conducting regular sanitation checks and adhering to HACCP guidelines.
- Monitor inventory levels of raw materials, place requisitions, and minimize waste through proper storage and portion control.
- Train junior kitchen staff on traditional cooking techniques, knife skills, and proper handling of spices and herbs unique to Sundanese and Cirebon cuisine.
- Collaborate with the restaurant manager on cost control, menu pricing, and profitability analyses.
- Participate in regular kitchen meetings, offering feedback on equipment needs and process improvements.
- Ensure all dishes are served hot, flavorful, and visually appealing, meeting the expectations of both local guests and tourists.
Requirements
- All education levels accepted; a passion for cooking outweighs formal qualifications.
- Age between 20 and 35 years.
- Minimum of 1 year proven experience in a professional kitchen, preferably with a focus on Sundanese or Cirebon dishes.
- Demonstrated ability to work with traditional Indonesian spices, sambal, and regional cooking methods such as grilling (bakakak), steaming (kue), and slow‑cooking.
- Strong work ethic: honesty, discipline, and a high sense of responsibility.
- Excellent communication skills and the ability to work both independently and as part of a team.
- Physical stamina to stand for long periods and handle the fast‑paced environment of a busy restaurant.
