Introduction
The Senior Manajer Operasi Kitchen is a pivotal leadership role responsible for steering the daily performance of a high‑volume kitchen in the bustling South Jakarta area. Responsibilities
- Oversee all kitchen activities, ensuring that food preparation, cooking, and plating meet the brand’s quality and presentation standards.
- Develop and manage staff schedules for a team of cooks, sous‑chefs, and kitchen assistants, guaranteeing optimal coverage during peak service periods.
- Control inventory levels, conduct regular stock counts, and coordinate with suppliers to maintain fresh, cost‑effective ingredient flow.
- Implement and monitor strict food safety and sanitation protocols in compliance with local health regulations.
- Lead training programs on culinary techniques, equipment usage, and customer‑service etiquette to enhance staff skill sets.
- Collaborate with the culinary development team to test new recipes, adjust portion sizes, and streamline plating processes.
- Analyze daily and weekly performance metrics, preparing reports on waste, labor costs, and productivity for senior management.
- Resolve operational challenges swiftly, maintaining a calm and solution‑focused kitchen atmosphere.
- Foster open communication, encouraging feedback from team members to continuously improve workflow.
- Participate in recruitment, onboarding, and performance evaluation of kitchen personnel.
Requirements
- Minimum education: SMA/SMK or equivalent.
- Age: 20 years or older.
- Residency: Must reside in South Jakarta or surrounding neighborhoods.
- Full‑time availability with a work schedule of Monday – Saturday, 08:00 – 17:00.
- At least 6 months of experience in a restaurant or café environment, preferably with exposure to kitchen operations.
- Hands‑on experience operating kitchen equipment is considered a strong advantage.
- Demonstrated qualities: disciplined, honest, courteous, friendly, healthy, clean, communicative, and responsible.
- Strong leadership and team‑building skills, with the ability to motivate diverse staff.
- Excellent time‑management and problem‑solving abilities under high‑pressure conditions.
- Good command of Bahasa Indonesia; English proficiency is a plus.
