Introduction

The Central Kitchen in Sawangan, Depok is seeking enthusiastic and reliable individuals to join our fast‑growing food production team as Kitchen Operations Crew Members. As part of a dedicated crew, you will play a pivotal role in ensuring that our sauces, stocks, and ready‑to‑serve meals reach our retail outlets and partner restaurants on time, every time.

Responsibilities

  • Prepare and cook large‑scale batches of sambal, broth, and other core components according to standardized recipes.
  • Execute the full production cycle of the central kitchen, including ingredient receiving, pre‑preparation, cooking, portioning, packing, and dispatch.
  • Maintain strict adherence to FIFO (First‑In‑First‑Out) inventory management, ensuring proper rotation and traceability of raw materials.
  • Monitor and record critical control points such as cooking temperatures, cooking times, and sanitation checks to guarantee compliance with HACCP and local food safety regulations.
  • Collaborate closely with the quality assurance team to perform routine taste tests, ensuring flavor consistency across all product lines.
  • Assist in the planning and execution of daily production targets, adjusting workflow to meet tight delivery deadlines for multiple outlet locations.
  • Perform routine cleaning and sanitizing of workstations, equipment, and storage areas, following the company’s hygiene protocols.
  • Participate in shift handovers, providing clear communication on production status, inventory levels, and any issues that arose.
  • Support continuous improvement initiatives by suggesting process optimizations, waste‑reduction ideas, and equipment maintenance recommendations.

Requirements

  • Minimum education: SMA/SMK or equivalent, preferably with a focus on culinary arts or food technology.
  • At least 1 year of hands‑on experience in large‑scale catering, food manufacturing, or a high‑volume kitchen environment.
  • Demonstrated ability to work with bulk quantities, especially in the preparation of sambal, sauces, and stock bases.
  • Strong understanding of central kitchen workflows, including preparation, cooking, packaging, and distribution logistics.
  • Proficiency in following standardized recipes and maintaining consistent taste profiles across batches.
  • Solid knowledge of food safety principles, including proper storage, sanitation, and the application of FIFO practices.
  • Physical stamina to stand for long periods, lift heavy containers, and work at a brisk pace during peak production runs.
  • Excellent teamwork, discipline, and the ability to adapt quickly to shifting priorities and shift schedules.
  • Willingness to work rotating shifts, including early mornings or evenings, to align with the kitchen’s operational hours (08:00‑17:00, Monday‑Saturday).
