Introduction
We are seeking a highly motivated Senior Cook to lead our hotel kitchen operations in Jember. This pivotal role combines culinary expertise with strong leadership, ensuring that every dish served meets the highest standards of taste, presentation, and safety. As a senior member of the culinary team, you will be responsible for shaping menu concepts, mentoring junior staff, and maintaining seamless daily operations in a fast‑paced, guest‑focused environment.
Responsibilities
- Plan, prepare, and execute a diverse range of high‑quality dishes for breakfast, lunch, and dinner services, adhering to the hotel’s culinary standards.
- Supervise and train kitchen staff, including line cooks, prep cooks, and dishwashers, fostering a collaborative and disciplined work environment.
- Develop seasonal menus, incorporate local ingredients from Jember, and work closely with the Food & Beverage manager to align offerings with guest preferences and hotel branding.
- Monitor inventory levels, conduct regular stock takes, and coordinate with suppliers to ensure timely delivery of fresh produce, meats, and pantry items.
- Enforce strict food safety and sanitation protocols, conducting routine kitchen inspections and ensuring compliance with local health regulations.
- Manage kitchen scheduling, allocate duties efficiently, and adjust staffing levels to accommodate peak periods while maintaining cost controls.
- Collaborate with the front‑of‑house team to handle special events, banquets, and private dining requests, guaranteeing seamless service delivery.
- Track food cost percentages, waste, and portion control, implementing corrective actions to meet budgetary targets.
Requirements
- Minimum education: SMA/SMK or equivalent; culinary training or certification is a strong plus.
- Residency in Jember or willingness to relocate to the area.
- At least 2‑3 years of professional cooking experience in a hotel or similar upscale hospitality setting; prior supervisory experience is advantageous.
- Demonstrated honesty, responsibility, strong work ethics, and a genuine desire to learn and grow within the culinary field.
- Flexible availability to work Monday through Saturday, 08:00 – 17:00, with the possibility of occasional overtime during events.
- Excellent communication skills, ability to work under pressure, and a team‑oriented mindset.
- Proficiency in basic kitchen equipment, knife skills, and knowledge of food safety standards.
