Introduction
We are seeking a highly motivated Senior Pastry Baker – Production Specialist to join our dynamic bakery team in Jember. Responsibilities
- Develop, test, and refine a wide range of pastry and cake recipes, incorporating seasonal ingredients and emerging trends.
- Plan and schedule daily production runs to meet demand forecasts while minimizing waste and controlling costs.
- Supervise and mentor junior bakers and production staff, providing hands‑on training in dough handling, decoration techniques, and food safety protocols.
- Maintain strict adherence to hygiene standards, conducting regular audits and ensuring compliance with local health regulations.
- Monitor inventory levels of raw materials, place purchase orders, and collaborate with suppliers to secure high‑quality ingredients at competitive prices.
- Implement quality control checkpoints throughout the production process, guaranteeing consistency in taste, texture, and visual appeal.
- Collaborate with the sales and marketing teams to create custom cake designs for special events, corporate orders, and promotional campaigns.
- Analyze production data to identify bottlenecks, propose process improvements, and drive continuous operational excellence.
- Ensure all equipment is properly maintained, performing routine checks and coordinating repairs as needed.
Requirements
- Minimum education: SMA/SMK or equivalent; a culinary diploma or related certification is a strong advantage.
- Residency in Jember or willingness to relocate to the Jember area.
- At least 2 years of hands‑on experience in a commercial bakery or pastry production environment; experience in a senior or supervisory role is preferred.
- Demonstrated creativity in cake design and pastry innovation.
- Strong work ethic: honesty, responsibility, professional ethics, and a genuine desire to learn and grow.
- Excellent time‑management skills with the flexibility to adapt to changing production schedules.
- Effective communication and teamwork abilities, capable of leading a diverse crew.
