Introduction

To support our expanding operations, we are seeking a dedicated Koki Utama Restoran dan Katering who can lead the kitchen team, maintain the highest standards of food safety, and deliver consistently delicious meals to our guests. Responsibilities

  • Prepare, cook, and present a wide range of menu items, with a primary emphasis on fried chicken dishes, side dishes, sauces, and accompanying salads.
  • Supervise kitchen staff, delegating tasks, monitoring performance, and providing on‑the‑job coaching to ensure efficient workflow.
  • Maintain strict adherence to hygiene and sanitation protocols, including regular cleaning of workstations, equipment, and storage areas.
  • Manage inventory levels, conduct daily stock checks, and coordinate with suppliers to ensure timely delivery of fresh ingredients.
  • Develop and update standard operating procedures (SOPs) for food preparation, cooking times, and portion control to guarantee consistency.
  • Monitor cooking temperatures and food safety temperatures in compliance with local health regulations and halal requirements.
  • Collaborate with the front‑of‑house team to synchronize order timing, ensuring meals are served promptly and at the correct temperature.
  • Participate in menu development, suggesting new recipes, seasonal variations, and cost‑effective ingredient substitutions.
  • Maintain accurate records of waste, spoilage, and production yields to support cost‑control initiatives.
  • Uphold a professional demeanor, demonstrating respect, punctuality, and a strong work ethic at all times.

Requirements

  • Minimum education: SMA/SMK or equivalent.
  • Male candidates only, in accordance with the organization’s cultural considerations.
  • At least 1 year of proven experience in a fast‑paced restaurant kitchen, preferably with a focus on fried chicken or similar fast‑food operations.
  • Strong knowledge of international cooking techniques and the ability to adapt recipes to local tastes.
  • Excellent teamwork and communication skills; ability to lead and motivate a diverse kitchen crew.
  • Demonstrated commitment to cleanliness, including thorough understanding of kitchen sanitation standards.
  • Ability to perform the five daily prayers (Ibadah 5 waktu) and maintain a non‑smoking lifestyle, including no use of vape or pod devices.
  • Good moral character and a respectful attitude toward colleagues and customers.
  • Flexibility to work seven days a week, with scheduled hours from 08:00 to 17:00.
  • Physical stamina to stand for long periods and handle the demands of a busy kitchen environment.
