Responsibilities
- Oversee daily kitchen operations, coordinating prep, cooking, and service to achieve seamless workflow.
- Develop, test, and refine menu items, incorporating both international and traditional Indonesian flavors.
- Lead, coach, and mentor a team of cooks, sous chefs, and kitchen assistants, fostering a culture of collaboration and continuous improvement.
- Maintain strict food‑quality standards, conducting regular plating checks and taste evaluations.
- Manage inventory, forecast ingredient needs, and implement food‑cost control measures to meet budget targets.
- Ensure compliance with hygiene, sanitation, and food‑safety regulations, including proper use of woks, high‑pressure stoves, and other specialized equipment.
- Create and enforce standard operating procedures (SOPs) for preparation, storage, and waste reduction.
- Collaborate with the front‑of‑house manager to synchronize service times and handle peak‑hour pressures.
- Prepare shift schedules, monitor attendance, and handle performance evaluations.
- Participate in recruitment, onboarding, and ongoing training of kitchen staff.
Requirements
- Minimum education: SMA/SMK or equivalent; culinary certification is a plus.
- Age not exceeding 35 years; all genders welcomed.
- At least 1–3 years of professional kitchen experience, preferably as Head Kitchen, Sous Chef, or Senior Cook.
- Proven leadership ability with a track record of managing diverse kitchen teams.
- Strong knowledge of cooking techniques, especially wok handling and high‑pressure stove operations.
- Excellent command of food‑quality control, plating standards, and menu costing.
- Demonstrated competence in stock management, inventory audits, and food‑cost optimization.
- Commitment to maintaining a clean, hygienic workspace in line with food‑safety regulations.
- Ability to work both independently and collaboratively under high‑pressure, target‑driven environments.
- Willingness to work full‑time with rotating shifts, including mornings (07:00‑13:00) and weekends.
- Residence in Cinere or surrounding areas is highly preferred.
- Key soft skills: strong communication, rapid adaptation, problem‑solving, and a high work ethic.
