Responsibilities
- Lead and coordinate the kitchen team during service hours, delegating tasks to cooks, sous‑chefs, and line staff.
- Plan, prep, and execute menu items according to the executive chef’s recipes, maintaining consistency and quality.
- Manage inventory, conduct daily stock checks, and place orders for fresh produce, meats, seafood, and pantry items.
- Ensure strict compliance with food safety, sanitation, and hygiene standards (HACCP, local regulations).
- Develop and mentor junior kitchen staff, providing on‑the‑job training, performance feedback, and career development guidance.
- Collaborate with front‑of‑house managers to synchronize service timing, special requests, and menu changes.
- Monitor and control food costs, reduce waste, and implement portion‑control strategies.
- Handle high‑pressure situations with composure, troubleshooting equipment failures or unexpected service spikes.
- Participate in menu development sessions, offering creative input that reflects Balinese flavors and international trends.
- Maintain a clean, organized, and safe working environment, conducting regular equipment inspections.
Requirements
- Minimum education: D3/D4 (Associate or Bachelor degree) in Culinary Arts, Hospitality Management, or a related field.
- Proven experience as a kitchen captain, sous‑chef, or senior line cook in a high‑volume, upscale restaurant or resort.
- Strong communication skills in Bahasa Indonesia and English; ability to give clear instructions and receive feedback.
- Demonstrated honesty, reliability, and a strong sense of responsibility.
- Ability to work effectively both independently and as part of a collaborative team.
- Resilience under pressure; capable of maintaining composure during peak service periods.
- Excellent customer‑service mindset, understanding that food quality directly impacts guest satisfaction.
