Introduction

We are seeking a dynamic and seasoned Kitchen Captain to lead our culinary team at our premier beachfront venue in Uluwatu. This role is the heartbeat of the kitchen, ensuring that every dish that leaves the line reflects the highest standards of quality, consistency, and creativity that our guests have come to expect. The successful candidate will blend strong operational expertise with a passion for hospitality, creating an environment where both staff and diners thrive.

Responsibilities

  • Oversee daily kitchen operations, coordinating prep, cooking, and plating to meet service timelines.
  • Develop and enforce standard operating procedures for food safety, hygiene, and quality control.
  • Manage inventory, conduct regular stock counts, and collaborate with suppliers to maintain optimal levels of ingredients while minimizing waste.
  • Mentor and train junior chefs, line cooks, and kitchen assistants, fostering a culture of continuous improvement and teamwork.
  • Design and update menu items in partnership with the Executive Chef, ensuring alignment with seasonal produce and guest preferences.
  • Monitor kitchen performance metrics, such as ticket times, waste percentages, and cost of goods sold, and implement corrective actions when needed.
  • Coordinate closely with front‑of‑house managers to synchronize service flow and handle special guest requests or dietary restrictions.
  • Lead the kitchen through high‑pressure periods, maintaining composure and clear communication to ensure smooth service.
  • Conduct regular equipment maintenance checks and report any issues to the facilities team promptly.
  • Uphold the brand’s reputation by delivering dishes that consistently meet or exceed guest expectations.

Requirements

  • Minimum education: D3/D4 (Associate or Bachelor degree) in Culinary Arts, Hospitality Management, or a related field.
  • At least 2 years of proven experience in a supervisory kitchen role within a hotel, resort, or upscale restaurant.
  • Strong communication skills, both verbal and written, in Bahasa Indonesia and preferably basic English.
  • Demonstrated honesty, responsibility, and a strong work ethic.
  • Ability to work effectively both independently and as part of a collaborative team.
  • Proven capability to perform under pressure, meeting tight service deadlines without compromising quality.
  • Excellent customer‑service mindset with a focus on delivering memorable dining experiences.
  • Flexibility to work Monday through Saturday, 08:00‑17:00, with occasional overtime during peak periods or special events.
