Introduction
We are seeking a dynamic Manajer Operasional Crew Outlet to lead the kitchen operations of our thriving ramen outlet in Sidoarjo, Kecamatan Candi. This position is ideal for candidates who are passionate about food‑and‑beverage (F&B) service, possess strong organizational skills, and are ready to ensure that every bowl of ramen meets our high standards of taste, safety, and presentation. The role offers a full‑time schedule from Monday to Saturday, 08:00 – 17:00, and is based in Sidoarjo, with a preference for local residents.
Responsibilities
- Prepare, cook, and plate ramen and accompanying condiments in strict accordance with company recipes and quality guidelines.
- Conduct daily ingredient prep (cutting, marinating, portioning) prior to service to guarantee smooth kitchen flow.
- Maintain immaculate kitchen hygiene by cleaning workstations, equipment, and storage areas, and by enforcing food safety protocols.
- Monitor and manage inventory levels, perform stock checks, and coordinate with suppliers to prevent shortages or waste.
- Ensure consistency of flavor, texture, and presentation across all shifts, conducting regular taste tests and adjusting procedures as needed.
- Support peak‑hour operations by directing crew members, delegating tasks, and troubleshooting any issues that arise.
- Record daily stock movements, waste, and production totals in the outlet’s reporting system.
- Train new kitchen staff on standard operating procedures, proper equipment handling, and safety standards.
- Collaborate closely with front‑of‑house managers to synchronize service timing and meet customer expectations.
- Participate in periodic menu development meetings, offering feedback on ingredient availability and preparation feasibility.
Requirements
- Minimum education: SMA/SMK or equivalent.
- Age limit: up to 28 years old; open to all genders.
- At least 1 year of experience working in a kitchen environment; experience with ramen or Asian cuisine is a plus.
- Strong understanding of food hygiene, sanitation, and safety regulations.
- Physical stamina to stand for long periods and move quickly in a fast‑paced setting.
- Honesty, discipline, and a high sense of responsibility.
- Excellent teamwork and communication skills; ability to work flexible shift patterns.
- Fresh graduates with a genuine interest in the F&B industry are welcomed.
- Preference given to candidates residing in Sidoarjo.
- Key skills: kitchen hygiene management, operation of commercial kitchen equipment, inventory control, and basic menu costing.
