Introduction
We are seeking a motivated and talented Sous Chef – Penanggung Jawab Operasional Dapur to join our vibrant kitchen team. This role is pivotal in delivering an authentic fusion of Middle Eastern and Mediterranean flavors while ensuring smooth daily operations. The successful candidate will work closely with the Head Chef to uphold our high culinary standards, manage kitchen staff, and maintain a safe, efficient, and inspiring work environment.
Responsibilities
- Assist the Head Chef in planning, designing, and executing a dynamic menu that showcases a blend of Middle Eastern and Mediterranean cuisine.
- Oversee daily kitchen operations, including prep, cooking, plating, and service, ensuring timely delivery of dishes during the 08:00 – 17:00 shift.
- Supervise, train, and mentor junior kitchen staff, fostering teamwork, professionalism, and continuous skill development.
- Maintain strict adherence to food safety, sanitation, and hygiene standards in compliance with local regulations and BPJS health requirements.
- Control inventory levels, conduct regular stock checks, and coordinate with suppliers to guarantee the availability of fresh ingredients.
- Manage kitchen budgeting, cost control, and waste reduction initiatives to improve profitability.
- Develop and implement standard operating procedures (SOPs) for cooking techniques, portion control, and plating presentation.
- Collaborate with the service team to ensure a seamless dining experience, including coordination of wine and beverage pairings.
- Monitor and respond to customer feedback, adjusting recipes and service approaches as needed.
- Prepare daily reports on kitchen performance, inventory usage, and labor efficiency for senior management review.
Requirements
- Education: Minimum high school diploma (SMA/SMK) or equivalent; culinary school training is a plus.
- Age: Applicants up to 35 years old (maximum 0 years is a placeholder; we welcome fresh talent).
- Gender: Open to all genders.
- Experience: At least 0–2 years of professional kitchen experience; experience in Middle Eastern or Mediterranean cuisine is highly desirable.
- Core Skills: Strong cooking techniques, menu development, knife skills, and a solid understanding of flavor profiles.
- Soft Skills: Excellent communication, leadership, problem‑solving ability, and a passion for culinary innovation.
- Physical Ability: Capable of standing for long periods and handling the physical demands of a busy kitchen.
- Knowledge of local labor regulations and BPJS benefits administration.
