Introduction
We are seeking a motivated and skilled Sous Chef – Pengawas Tim Dapur to join our dynamic culinary team in the upcoming Ibu Kota Nusantara (IKN). This pivotal role will support the Executive Chef in delivering exceptional food experiences across our hospitality venues, while ensuring that kitchen operations run smoothly and efficiently. The ideal candidate will bring at least one year of hands‑on experience in a fast‑paced hotel or restaurant environment, a strong work ethic, and a passion for Indonesian and international cuisine.
Responsibilities
- Supervise daily kitchen activities, coordinating a team of cooks, line chefs, and prep staff to meet service standards.
- Assist the Executive Chef in menu planning, recipe development, and seasonal menu updates that reflect local flavors and guest preferences.
- Maintain strict food safety, hygiene, and sanitation protocols in compliance with national regulations and company policies.
- Monitor inventory levels, conduct regular stock takes, and collaborate with the purchasing department to control food costs.
- Train and mentor junior kitchen personnel, fostering a culture of continuous improvement and teamwork.
- Ensure consistent plating, portion control, and presentation quality for all dishes served.
- Handle special dietary requests and adapt recipes to accommodate allergies, religious restrictions, or health‑focused menus.
- Participate in quality audits, respond to guest feedback, and implement corrective actions when necessary.
Requirements
- Education: Minimum SMA/SMK or equivalent.
- Experience: At least 1‑2 years in a similar sous chef or kitchen supervisory role within the hospitality industry.
- Skills: Proficient cooking techniques, strong knife skills, knowledge of Indonesian and international cuisines, and the ability to read and execute recipes accurately.
- Personal Attributes: Hardworking, detail‑oriented, capable of thriving under pressure, and possessing excellent communication and leadership abilities.
- Location Flexibility: Willingness to relocate to Ibu Kota Nusantara (IKN); preference given to candidates currently residing in Kalimantan.
- Availability: Ability to start immediately and commit to a full‑time schedule (Monday‑Saturday, 08:00‑17:00).
