Introduction
We are seeking a seasoned Senior Cook – Dapur Operasional Profesional to join our dynamic culinary team. This full‑time position is based in a high‑traffic hotel kitchen where the candidate will lead pastry production, support breakfast and dinner service, and ensure consistent quality across all baked goods. Responsibilities
- Plan, prepare, and present a wide variety of pastries, cakes, breads, and traditional market snacks (jajan pasar) for hotel guests and banquet events.
- Develop and test new recipes, incorporating seasonal ingredients and current culinary trends to keep the menu innovative.
- Supervise and mentor junior kitchen staff, ensuring proper technique, portion control, and timely execution of orders.
- Manage inventory of baking supplies, conduct daily stock checks, and coordinate with the procurement team to minimize waste.
- Maintain strict compliance with food safety regulations, cleaning schedules, and sanitation protocols.
- Collaborate with the executive chef and front‑of‑house managers to align pastry offerings with overall menu concepts.
- Operate efficiently across all shifts—morning, evening, and night—ensuring continuity of service and product freshness.
- Handle multiple orders simultaneously while preserving quality, demonstrating strong multitasking abilities.
- Communicate clearly with teammates and management to address any operational challenges promptly.
Requirements
- Minimum of 2 years proven experience in hotel pastry operations.
- High school diploma (SMA/SMK) or equivalent; culinary certification is a plus.
- Female candidates only, as specified by the client’s staffing policy.
- Demonstrated honesty, responsibility, and discipline in previous roles.
- Ability to work both independently and as part of a collaborative kitchen team.
- Proficiency in creating a diverse range of cakes, breads, and traditional Indonesian snacks.
