Kyuka Ramen, a fast‑growing restaurant chain specializing in authentic Japanese ramen and modern Asian cuisine, is seeking a dedicated Senior Restaurant Cook (Koki Restoran Senior) to join our dynamic kitchen teams across multiple locations in Indonesia. This role is ideal for individuals with a solid foundation in culinary techniques, a passion for food preparation, and the ability to thrive in a fast‑paced, customer‑focused environment. The successful candidate will be responsible for delivering high‑quality dishes, maintaining strict hygiene standards, and supporting the overall efficiency of the kitchen.

Responsibilities

  • Prepare and portion all ingredients according to standardized recipes, ensuring freshness and consistency.
  • Cook menu items—including ramen broth, noodles, toppings, and side dishes—promptly and accurately to meet customer orders.
  • Plate dishes with attention to visual appeal, adhering to Kyuka Ramen’s presentation standards.
  • Maintain a clean, organized, and sterilized work area, including regular sanitation of equipment, utensils, and surfaces.
  • Monitor inventory levels, conduct regular stock checks, and communicate supply needs to the kitchen supervisor.
  • Collaborate closely with waitstaff to ensure timely delivery of meals and address any special dietary requests.
  • Apply FIFO (First‑In‑First‑Out) inventory management to minimize waste and control costs.
  • Perform basic calculations for portion control, costing, and daily sales reporting.
  • Assist in training junior kitchen staff on cooking techniques, safety protocols, and kitchen workflow.
  • Participate in menu development sessions, offering ideas for new dishes or improvements to existing recipes.

Requirements

  • Minimum education: SMA/SMK or equivalent; culinary training (Tata Boga) is highly preferred.
  • At least 1 year of proven experience working in a professional kitchen, preferably in a ramen or Asian‑style restaurant.
  • Physical stamina to stand for long periods, lift heavy pots, and handle fast‑paced service periods.
  • Strong numeracy skills for accurate portioning, cost control, and inventory tracking.
  • Height requirements: male ≥ 160 cm, female ≥ 155 cm (to ensure safe handling of equipment).
  • Must not be currently enrolled in any academic program.
  • Excellent teamwork and communication abilities; ability to coordinate seamlessly with front‑of‑house staff.
  • Flexibility to work various shifts, including morning, middle, and evening schedules.
  • Willingness to be stationed at any of our inter‑city outlets, including Bekasi, Surabaya, West Java, South Jakarta, and Gading Serpong.

Benefits

  • Base salary of Rp 1,500,000 per month.
  • Meal allowance of Rp 300,000 and transportation allowance of Rp 300,000.
  • Performance‑based sales bonus ranging from Rp 500,000 to Rp 1,500,000.
  • Annual Holiday Allowance (THR) in accordance with Indonesian labor regulations.

  • Initial 3‑month contract with a structured evaluation; no penalty after the fourth month.
