Introduction

We are seeking a dedicated Baker Senior – Production & Quality Specialist to join our dynamic bakery team. This role is pivotal in ensuring that every loaf of bread, every pastry, and every cake leaving our kitchen meets the highest standards of taste, appearance, and food safety. The ideal candidate will bring at least one year of hands‑on bakery experience, a solid foundation in basic baking techniques, and a commitment to maintaining a clean, efficient, and collaborative production environment.

Responsibilities

  • Accurately prepare, weigh, and mix raw ingredients according to standardized recipes, ensuring consistency across batches.
  • Operate ovens, proofing cabinets, and other baking equipment to produce breads, cakes, cookies, and pastries that meet defined quality specifications.
  • Monitor baking times and temperatures, adjusting as necessary to achieve optimal texture, flavor, and visual appeal.
  • Maintain a hygienic work area by cleaning workstations, utensils, and baking tools after each shift, complying with local food‑safety regulations.
  • Conduct regular inspections of raw material inventories, report low stock levels, and coordinate with the purchasing department to secure timely replenishment.
  • Collaborate closely with fellow production staff, communicating any deviations from SOPs, and assisting teammates during peak production periods.
  • Enforce company Standard Operating Procedures (SOPs) and ensure all activities align with current food‑safety standards such as HACCP or ISO 22000.
  • Document production metrics, including yield, waste, and downtime, to support continuous improvement initiatives.
  • Mentor junior bakers by demonstrating proper techniques, safety protocols, and efficient workflow practices.
  • Participate in product development sessions, offering feedback on recipe feasibility and suggesting innovations that enhance product line diversity.

Requirements

  • Minimum education: High School Diploma (SMA/SMK) or equivalent; a focus on Culinary Arts or Food Service is preferred.
  • At least 1 year of professional experience in a bakery or pastry production environment.
  • Proficiency in basic baking methods, dough handling, proofing, and oven operation.
  • Certification or formal training in bakery/pastry arts (e.g., Certified Baker, Pastry Chef Diploma) is a strong advantage.
  • Strong attention to detail, with the ability to follow recipes and SOPs precisely.
  • Excellent communication skills; able to work effectively in a team and convey instructions clearly.
  • Physical stamina to stand for long periods, lift heavy sacks of flour, and perform repetitive tasks safely.
  • Commitment to maintaining a clean, organized, and safe workplace.
  • Flexibility to work Monday through Sunday, with shift hours from 06:50 AM to 05:00 PM.
