Responsibilities
- Supervise daily kitchen activities, ensuring food preparation adheres to company standards, safety regulations, and hygiene protocols.
- Plan, coordinate, and execute menu items, including mise en place, cooking, plating, and garnishing, while maintaining portion control and minimizing waste.
- Train, mentor, and evaluate junior kitchen staff, fostering teamwork, skill development, and a positive work culture.
- Monitor inventory levels, conduct regular stock counts, and coordinate with procurement to order fresh ingredients, ensuring cost‑effective purchasing.
- Maintain clean and organized workstations, enforce proper sanitation practices, and conduct routine equipment checks to prevent breakdowns.
- Collaborate closely with front‑of‑house managers to align kitchen output with service demands, especially during peak hours.
- Develop and update standard operating procedures (SOPs) for cooking techniques, safety, and emergency response.
- Assist in menu development, offering creative input on new dishes, seasonal specials, and dietary accommodations.
- Track key performance indicators such as ticket times, food cost percentages, and customer feedback to drive continuous improvement.
- Ensure compliance with local health department regulations and internal quality standards at all times.
Requirements
- Minimum education: SMA/SMK or equivalent; a culinary diploma or relevant training is a strong plus.
- Age limit: Up to 30 years old, especially for barista‑related responsibilities.
- Prior experience in the FnB industry, preferably in a supervisory or senior kitchen role.
- Demonstrated cooking skills with a solid foundation in Indonesian and international cuisines.
- Excellent interpersonal skills: cheerful, friendly, and highly communicative.
- Ability to work effectively in a team, handle shift rotations, and be available on weekends and public holidays.
