Responsibilities

  • Manage the daily mise en place, including ingredient selection, portioning, and storage to maintain freshness and safety.
  • Collaborate with the head chef and fellow kitchen staff to design seasonal menus that highlight regional specialties.
  • Maintain strict hygiene and food‑safety standards, performing regular sanitation checks and adhering to local health regulations.
  • Monitor inventory levels, place orders for fresh produce, spices, and other essentials, and minimize waste through efficient usage.
  • Train junior kitchen assistants and apprentices in traditional cooking methods, fostering a culture of mentorship.
  • Adapt recipes to accommodate dietary restrictions without compromising flavor, such as halal, vegetarian, or low‑sodium options.
  • Work effectively during peak service periods, ensuring timely delivery of dishes while maintaining composure under pressure.
  • Participate in regular kitchen meetings to provide feedback on menu performance and suggest improvements.
  • Document and preserve family or regional recipes for future reference, contributing to the restaurant’s culinary heritage archive.

Requirements

  • Minimum education: SMA/SMK or equivalent.

  • Proven experience in traditional Indonesian cuisine (minimum 1 year preferred).
  • Excellent communication skills and the ability to convey instructions clearly.
