Introduction
We are seeking a skilled and motivated Cook – Professional Kitchen Staff to join our dynamic culinary team. As a senior member of the kitchen, you will be responsible for preparing high‑quality dishes, managing inventory, and leading junior staff to ensure seamless daily service.
Responsibilities
- Execute food preparation and direct cooking of main menu items, with a strong emphasis on wok‑based techniques.
- Place and monitor orders for raw materials, ensuring that all ingredients meet our strict quality standards and are available when needed.
- Oversee daily kitchen operations from prep to plating, guaranteeing consistent taste, presentation, and timely service in line with restaurant recipes.
- Control food costs by accurately measuring portions, minimizing waste, and maintaining inventory records.
- Conduct regular inspections of kitchen equipment—including stoves, refrigeration units, and gas lines—and promptly report any maintenance issues.
- Respond to operational disruptions such as equipment failures, power outages, or gas leaks, coordinating with facilities management to resolve them quickly.
- Maintain a clean, safe, and hygienic work environment that complies with all food safety regulations and best‑practice hygiene standards.
- Mentor and train junior cooks, fostering a collaborative team atmosphere and ensuring that all staff follow standard operating procedures.
- Serve as the Person In Charge (PIC) for the kitchen during assigned shifts, making decisive decisions to keep service flowing smoothly.
Requirements
- Minimum education: High School (SMA/SMK) with a focus on culinary arts or a related field.
- At least 2 years of experience as a Senior Cook in a restaurant or hotel setting, with proven expertise in wok cooking.
- Strong knowledge of food cost management, ingredient control, and plating standards.
- Demonstrated ability to lead small teams, work under pressure during peak service periods, and maintain composure in a bustling kitchen.
- Excellent communication skills, disciplined work ethic, and a natural leadership mindset.
- Flexibility to work rotating shifts, including nights, weekends, and holidays.
- Physical stamina to stand for extended periods and handle the demands of a high‑volume kitchen.
