Responsibilities
- Assist senior chefs in the preparation and plating of classic Japanese dishes such as sushi, sashimi, tempura, ramen, and donburi, ensuring adherence to authentic techniques and presentation standards.
- Conduct ingredient prep work, including washing, cutting, marinating, and portioning, while maintaining strict hygiene and food‑safety protocols.
- Maintain a clean and organized workstation, performing regular sanitation of tools, equipment, and work surfaces in compliance with HACCP guidelines.
- Monitor inventory levels of specialty items (e.g., nori, soy sauce, wasabi) and communicate restocking needs to the kitchen supervisor.
- Support the kitchen during peak service periods, working efficiently under pressure to deliver dishes within the hotel’s established service timelines.
- Collaborate closely with front‑of‑house staff to ensure seamless communication of order specifications and any special guest requests.
- Participate in daily briefings and continuous training sessions to stay updated on menu changes, new cooking techniques, and Accor’s sustainability initiatives.
- Assist in the preparation of mise‑en‑place for banquet and event catering, adapting Japanese culinary concepts to diverse guest preferences.
- Contribute ideas for menu innovation, seasonal specials, and cost‑saving measures, demonstrating a proactive attitude toward culinary excellence.
Requirements
- Minimum education: D3/D4 in Culinary Arts, Hospitality Management, or a related discipline.
- At least 1–2 years of hands‑on experience in a Japanese or Asian‑style kitchen, preferably in a hotel or high‑volume restaurant.
- Strong ability to work both independently and as part of a collaborative team.
- Excellent communication skills and a customer‑centric mindset to deliver the highest level of guest satisfaction.
- Demonstrated ability to thrive in a fast‑paced environment, managing multiple tasks without compromising quality.
- Passion for guest service, with a solid understanding of operational standards in upscale hospitality.
- Basic knowledge of food safety regulations, knife skills, and Japanese cooking techniques.
- Flexibility to work Monday through Saturday, 08:00 – 17:00, with occasional overtime during special events.
