Responsibilities
- Plan, develop, and execute a diverse menu of cakes, pastries, breads, and local snack items that meet the hotel’s brand standards.
- Oversee daily preparation, baking, decorating, and plating processes while maintaining consistency in taste, texture, and presentation.
- Manage inventory of raw materials, conduct regular stock checks, and coordinate with the purchasing department to ensure timely replenishment.
- Train, mentor, and supervise junior pastry staff, fostering a collaborative and disciplined kitchen culture.
- Ensure strict adherence to food safety, hygiene, and sanitation protocols in accordance with local regulations.
- Work flexible shift schedules—including morning, evening, and night shifts—to support banquet, room service, and a‑la‑carte operations.
- Innovate new product concepts, experiment with seasonal ingredients, and incorporate guest feedback to keep the pastry offering fresh and competitive.
- Collaborate with the executive chef and other department heads to align pastry production with overall menu planning and special event requirements.
Requirements
- Minimum education: High School (SMA/SMK) or equivalent; culinary diplomas or certifications are a plus.
- At least 2 years of proven experience in a hotel pastry kitchen or a similar high‑volume environment.
- Demonstrated ability to create a wide range of cakes, breads, and traditional market snacks with consistent quality.
- Strong personal attributes: honesty, responsibility, discipline, and a proactive work ethic.
- Excellent teamwork skills combined with the capability to work independently when required.
- Creative, innovative mindset with strong multitasking abilities to manage simultaneous orders and production lines.
- Effective communication skills in Bahasa Indonesia (and basic English) to interact with guests, vendors, and internal teams.
- Flexibility to work rotating shifts (morning, evening, night) and occasional weekends as per hotel operational needs.
