Introduction
We are seeking a dedicated Staf Dapur – Penanggung Jawab Persiapan Makanan to join our dynamic kitchen team. This full‑time position plays a crucial role in ensuring that every dish leaving the kitchen meets our high standards for taste, presentation, and safety. The successful candidate will work from 08:00 to 17:00 on a schedule that will be communicated during the interview process. Responsibilities
- Preparation (Preparation)
- Wash, peel, slice, and marinate all raw ingredients according to recipe specifications.
- Measure and mix spices, sauces, and seasonings to match standard recipes.
- Conduct daily inventory checks to verify stock levels and freshness of ingredients.
- Maintain a clean and organized prep station before service begins.
- Cooking Process (Cooking)
- Execute cooking tasks following the restaurant’s SOPs and recipe cards.
- Monitor flavor, visual appeal, and portion size to guarantee consistency.
- Apply the First‑In‑First‑Out (FIFO) principle to ensure older stock is used first.
- Confirm that each dish reaches the proper temperature and is safe for consumption.
- Plating (Presentation)
- Arrange plates according to the established plating standards.
- Ensure each plate is spotless, well‑garnished, and ready for service.
- Communicate effectively with servers to expedite order delivery.
- Cleanliness & Sanitization
- Keep the kitchen area tidy throughout the shift.
- Wash and sanitize all cooking equipment immediately after use.
- Dispose of waste in accordance with local regulations and internal policies.
- Follow strict hygiene protocols, including hand washing and wearing gloves.
- Stock Management
- Inspect incoming deliveries for freshness and quality.
- Report low‑stock items promptly to the kitchen manager.
- Store ingredients using FIFO or FEFO methods to minimize waste.
- Identify opportunities to reduce spoilage and control costs.
- Team Collaboration
- Work closely with kitchen staff and front‑of‑house personnel.
- Provide clear communication during peak periods or when issues arise.
- Assist teammates during busy service to maintain smooth operations.
- Compliance with SOP & Safety
- Adhere to all kitchen Standard Operating Procedures and company policies.
- Operate knives, stoves, and other equipment safely.
- Identify and mitigate potential hazards to prevent accidents.
Requirements
- Minimum education: SMA/SMK or equivalent.
- Open to all genders.
- At least 1 year of experience in a fast‑paced kitchen environment.
- Strong commitment to hygiene standards and food safety.
- Excellent multitasking abilities and the capacity to adapt quickly to changing orders.
- Good interpersonal skills for effective teamwork and communication with service staff.
- Basic knowledge of inventory control and stock rotation methods.
- Physical stamina to stand for long periods and handle repetitive tasks.
