Introduction

We are seeking a dedicated Baker (Sheeter) – Professional Operations to join our Central Kitchen located in Tangerang (Pondok Kacang). This role is pivotal in producing high‑quality baked goods such as croissants, danishes, and puff pastries for our rapidly growing retail and wholesale network. The successful candidate will operate advanced sheeting and oven equipment, maintain strict hygiene standards, and collaborate closely with the Head Kitchen to meet daily production targets while supporting seasonal demand spikes.

Responsibilities

  • Operate the sheeter machine to roll, laminate, and cut dough according to established recipes and SOPs.
  • Run deck and convection ovens, adjusting temperature, time, and baking mode for each product type.
  • Prepare and condition dough for a variety of bakery items, ensuring proper hydration, fermentation, and lamination.
  • Monitor dough thickness and consistency, performing quality checks throughout the production cycle.
  • Execute proofing, baking, and finishing steps under the guidance of the Head Kitchen.
  • Accurately weigh and portion raw materials, maintaining inventory integrity.
  • Keep the work area, sheeter, ovens, and ancillary equipment clean and sanitized at all times.
  • Support daily production goals and assist in ramp‑up activities during high‑season periods.
  • Document batch records, production yields, and any deviations from standard procedures.
  • Participate in continuous improvement initiatives, suggesting process enhancements for efficiency and product quality.

Requirements

  • Minimum education: SMA/SMK or equivalent (preferably with a focus on culinary arts or food technology).
  • At least 1 year of hands‑on experience as a baker/sheeter; prior lamination experience is a strong advantage.
  • Solid understanding of dough preparation and lamination techniques for croissants, danishes, and puff pastries.
  • Proficiency in operating sheeter machines and both deck and convection ovens.
  • Strong attention to detail, ability to work quickly, and meet production targets without compromising quality.
  • Disciplined, responsible, and eager to learn new baking methods and technologies.
  • Willingness to work rotating shifts and overtime during peak seasons.
