Introduction
We are seeking a dynamic and detail‑oriented Koordinator Tim Operasional Kitchen to join the fast‑growing team at 360 Warung Makan. This position serves as the operational backbone of our kitchen, ensuring that every dish leaves the line on time, at the right temperature, and with the quality our guests expect. The role is ideal for a recent graduate of a culinary program or a motivated individual with hands‑on kitchen experience who thrives in a fast‑paced, shift‑based environment.
Responsibilities
- Prepare and plate a wide variety of menu items for up to 360 guests per service, adhering to recipe specifications and presentation standards.
- Coordinate daily kitchen activities, including assigning tasks to line cooks, monitoring prep work, and ensuring smooth hand‑offs between shifts.
- Maintain accurate inventory records, conduct regular stock counts, and collaborate with the purchasing department to place timely orders.
- Implement and enforce food safety and sanitation protocols in compliance with local health regulations.
- Monitor cooking equipment, report maintenance issues, and ensure all tools are cleaned and stored properly after each shift.
- Train new kitchen staff on cooking techniques, portion control, and workplace safety, fostering a culture of continuous improvement.
- Assist the Head Chef in menu development, costing analysis, and seasonal ingredient sourcing.
- Prepare daily reports on production output, waste, and labor utilization for management review.
- Act as the primary point of contact for any operational issues during the 08:00‑17:00 shift schedule, Monday through Saturday.
Requirements
- Age between 20 and 25 years; unmarried candidates are preferred.
- Gender: Female (preference) – however, all qualified candidates are encouraged to apply.
- Minimum education: SMA/SMK or equivalent; a diploma from a culinary school (Sekolah Tata Boga) is a strong advantage.
- At least 0‑1 year of practical kitchen experience or apprenticeship in a professional food‑service environment.
- Demonstrated proficiency in basic cooking techniques, knife skills, and menu execution.
- Ability to perform accurate stock calculations, record-keeping, and basic cost control.
- Willingness to work rotating shifts, including weekends, under a structured schedule.
- Strong personal attributes: responsibility, independence, meticulous attention to detail, honesty, and a proactive attitude.
- Excellent communication skills, both verbal and written, with the ability to collaborate across departments.
