Introduction

We are seeking a motivated and reliable Staff Cold Kitchen Operasional to join our dynamic food service team. This role is essential to the smooth operation of our cold kitchen, where precision, hygiene, and teamwork are paramount. Responsibilities

  • Prepare, assemble, and garnish cold dishes such as salads, platters, charcuterie, and sushi rolls according to company recipes and presentation standards.
  • Maintain strict compliance with food safety regulations, including proper storage, labeling, and temperature control of all ingredients.
  • Operate and clean all cold‑kitchen equipment, including slicers, mixers, and refrigeration units, ensuring they are in optimal working condition.
  • Coordinate with the hot kitchen and service staff to ensure timely delivery of orders during peak periods.
  • Monitor inventory levels of perishable and non‑perishable items, reporting shortages and assisting in stock rotation to minimize waste.
  • Adhere to daily sanitation schedules, performing deep cleaning of work surfaces, utensils, and storage areas.
  • Assist in menu development by suggesting new cold‑dish concepts and providing feedback on ingredient quality.
  • Handle special dietary requests (e.g., gluten‑free, vegan) with accuracy and professionalism.
  • Work collaboratively with team members, sharing knowledge and supporting new staff during onboarding.
  • Maintain a calm and focused demeanor while working under pressure, especially during large events or banquet service.

Requirements

  • Minimum education: SMA/SMK or equivalent.
