We are seeking a dynamic Chef Senior – Manajer Dapur to lead the culinary operations of our high‑quality restaurant. This senior‑level role combines creative menu development, rigorous kitchen management, and strong team leadership to ensure an unforgettable dining experience for our guests. Responsibilities

  • Design, test, and refine seasonal menus that reflect current food trends while maintaining the restaurant’s signature style.
  • Oversee daily kitchen operations, ensuring timely preparation, plating, and service of all dishes.
  • Manage inventory, conduct regular stock takes, and coordinate with suppliers to guarantee fresh, high‑quality ingredients at optimal cost.
  • Implement and enforce strict food safety, sanitation, and hygiene standards in compliance with local regulations.
  • Train, coach, and evaluate junior chefs and kitchen assistants, fostering a collaborative and growth‑oriented environment.
  • Control food and labor costs by monitoring portion sizes, minimizing waste, and optimizing staff schedules.
  • Collaborate with front‑of‑house managers to align culinary offerings with guest feedback and service flow.
  • Lead special events, tasting menus, and catering projects, ensuring consistency and excellence across all offerings.
  • Maintain a clean, organized, and safe kitchen workspace, conducting regular equipment inspections and maintenance.

Requirements

  • Minimum education: SMA/SMK or equivalent; culinary school diploma or certification is a strong advantage.
  • At least 2‑3 years of experience in a senior kitchen or sous‑chef role, preferably in a full‑service restaurant.
  • Demonstrated ability to lead a diverse team with integrity, honesty, and responsibility.
  • Strong culinary skills across a range of cooking techniques, with a particular focus on Indonesian cuisine.
  • Excellent teamwork and communication skills; ability to collaborate effectively with both kitchen and front‑of‑house staff.
  • Highly organized, detail‑oriented, and capable of working under pressure in a fast‑paced environment.
  • Proven track record of cost control, menu engineering, and inventory management.
  • Flexibility to work Monday through Saturday, 08:00‑17:00, with occasional evenings or special event duties.
