Introduction
We are seeking a dedicated and experienced Supervisor Operasional Badung to lead our kitchen crew and ensure the highest standards of food preparation, hygiene, and team performance. The Supervisor will act as the bridge between the kitchen staff and senior management, translating strategic goals into daily actions while maintaining a safe, clean, and productive kitchen.
Responsibilities
- Lead, coach, and schedule the kitchen crew to ensure smooth daily operations from opening to closing.
- Monitor food preparation to guarantee each dish meets recipe specifications, portion control, and presentation standards.
- Enforce strict hygiene and food safety protocols, including HACCP guidelines, and conduct regular sanitation audits.
- Perform inventory checks, coordinate with the purchasing department, and manage stock levels to prevent shortages or waste.
- Develop and deliver ongoing training programs for kitchen staff, focusing on skill development, safety awareness, and customer service excellence.
- Conduct performance evaluations, provide constructive feedback, and implement corrective actions when needed.
- Prepare accurate daily and weekly operational reports for the Operations Manager, highlighting productivity metrics, waste, and any incidents.
- Collaborate with menu development teams to test new recipes and ensure feasibility within kitchen workflow.
- Handle emergency situations such as equipment breakdowns or unexpected staff absences, ensuring continuity of service.
- Promote a culture of teamwork, accountability, and continuous improvement across all kitchen functions.
Requirements
- Minimum education: High School Diploma (SMA/SMK) or equivalent; culinary certification is a plus.
- At least 1 year of supervisory experience in a kitchen or food‑service environment, preferably within a hotel, resort, or large restaurant operation.
- Strong understanding of kitchen operations, food preparation techniques, and food safety standards (HACCP knowledge highly preferred).
- Demonstrated leadership and interpersonal skills, with the ability to motivate diverse teams and resolve conflicts.
- Excellent communication skills, both verbal and written, to interact effectively with staff, suppliers, and management.
- Ability to work under pressure, meet tight deadlines, and maintain composure during peak service periods.
- Flexibility to work a rotating schedule, including weekends (Monday‑Sunday) and the specified shift of 07:00‑16:00.
