Introduction

We are seeking a highly motivated Koki Pastry Senior – Spesialis Kue & Roti to join our dynamic culinary team. This senior pastry chef will play a pivotal role in shaping our bakery’s creative direction, ensuring that every loaf, cake, and pastry meets the highest standards of taste, texture, and visual appeal. The ideal candidate will bring at least one year of focused experience in a similar role, a passion for innovation, and a proven ability to lead and inspire a diverse kitchen crew.

Responsibilities

  • Develop and execute daily production plans for breads, pastries, and specialty cakes, ensuring consistency and quality across all items.
  • Lead a team of junior bakers and pastry assistants, providing hands‑on training, mentorship, and performance feedback.
  • Innovate new product concepts by researching market trends, experimenting with flavor combinations, and incorporating seasonal ingredients.
  • Maintain strict adherence to food safety regulations, sanitation standards, and internal SOPs, conducting regular kitchen audits.
  • Manage inventory levels, forecast raw material needs, and collaborate with procurement to minimize waste while controlling costs.
  • Coordinate with front‑of‑house staff to ensure timely service, accurate order fulfillment, and exceptional customer experiences.
  • Prepare detailed production reports, track key performance indicators such as yield and waste, and propose process improvements.
  • Uphold the brand’s visual and taste standards, ensuring that every product is presented with meticulous attention to detail.

Requirements

  • Minimum education: D3/D4 in Culinary Arts, Baking & Pastry, or a related field.
  • At least 1 year of proven experience in a senior pastry or bakery position.
  • Strong leadership skills with the ability to motivate and develop a team.
  • Demonstrated creativity and innovation in product development.
  • Excellent communication skills, both verbal and written, to effectively liaise with kitchen staff, management, and suppliers.
  • High level of attention to detail, ensuring consistency in taste, texture, and presentation.
  • Team‑spirit orientation and a service‑mindset focused on delivering exceptional guest experiences.
  • Flexible to work Monday through Saturday, 08:00 – 17:00.
